Complete a month worth of COOKED meals for the freezer in one weekend.

Hubby shopped for me thursday night.  I start cooking around 4:30 friday.

cost for all about $300.00 including aluminum pans and all meats and fresh produce and dairy for a week

Goals:
4 pans cheese enchiladas w/chili sauce
4 pans chicken enchiladas w/cheese sauce
4 pans of outrageous meatball parm (http://hugsandcookiesxoxo.com/2014/07/outrageous-meatball-parm.html)
16 bean and beef burritos
12-16 personal pan pizzas (various toppings)
shredded pork for pulled pork sandwiches
taco meat for tacos
12-16 burgers


friday night:
pork roast for pulled pork went in the oven at 4:30 (http://thepioneerwoman.com/cooking/2011/03/spicy-dr-pepper-shredded-pork/)
make ground meat for chili sauce browned off and chili sauce
make red gravy for meatball parm
chicken on to cook overnight

it's 7pm friday night and the chili is made and cooling, the red gravy is made and simmering, the pork roast is still cooking and i've cooked dinner for the family as well

saturday:

shred chicken and package leftovers after enchiladas are made
shred pork and package
roll enchiladas (cheese and chicken)
make meatballs and put together meatball parm
make pizzas

sunday:

make burgers (will cook them off so they just need heating)
make taco meat and package
make burritos from start to finish (brown ground meat and then roll)

Sunday 4:30 pm update

ground meat for burgers isn't thawed out yet so they are the only thing left unmade

so here is what i got done in one weekend ... friday and sunday were minimal and could have been done on saturday but cooking the chickens overnight and the pork roast takes hours and heats up the kitchen so did those friday night along w/some other easy peasy stuff that would make saturday go faster

all meals serve 3-4 except the personal pizzas and burritos each of those is one serving

4 pans cheese enchiladas w/chili sauce
4 pans chicken enchiladas w/cheese sauce
7 pans of outrageous meatball parm
18 bean and beef burritos
6 family size pizzas
8 personal sized pizzas
4 baggies of pulled pork
2 baggies taco meat for tacos
4 boxes of smoked sausage (we don't do anything but cook these so there was no cooking but they are in the total cost of food and meals in the freezer)

39 meals cooked and frozen ... 4 more to go and there is still some food in the freezer that can be cooked if I just feel like cooking ... in the total $$$ amount was 1 box of smoked sausage and a couple of sweet potatoes (dinner friday night) and a couple of bags of corn chips for chili and cheese nachos (leftover chili and cheese sauce from enchiladas eaten saturday and sunday)
